- Marinate chicken thighs by pouring oil and wet seasoning on and set for 1 hour or over night 
- Pre heat one side of grill tmedium thigh temperature and other side tlow temperature 
- Start by grilling on the side of the grill with high heat. Creating a char and sealing in juices. Do this on either side of for 2 minutes. 
- Transfer thighs tside with low heat and let it finish cooking approximately 8-10 minutes. 
- Pineapple relish: 
- 2 Grace tin pineapple rings - diced (liquid of 1 tin) 
- 2 tablespoon lemon juice 
- 3 sprigs cilantro 
- salt and black pepper ttaste 
- Make this by simply combining all ingredients and place in fridge to allow flavours to develop
