  • To Make Dough:
  • 2 pound(s) All Purpose Flour
  • 1/2 pound(s) Grace Margarine
  • 1/2 tablespoon(s) salt
  • 1 cup(s) water
  • To Make Mackerel Filling:
  • 1 can(s) Grace Jack Mackerel, 15 oz.
  • 4 cup(s) Grace Vegetable Oil
  • 1 medium onion, chopped
  • 2 stalk(s) escallion, chopped
  • 2 clove(s) garlic, minced
  • 1 small sweet pepper, chopped
  • 2 tablespoon(s) Grace Mayonnaise
  • 2 large tomatoes
  • 1 head(s) lettuce

Mackerel Patty Directions

  1. Combine flour, margarine, salt and water and mix to form a smooth dough.  Cover and allow to relax for about 10 minutes.
  2. Debone and flake the mackerel and set aside.
  3. Heat saucepan, add 2 Tablespoons Grace Vegetable Oil and use to saute seasonings.
  4. Combine the sauteed seasonings with the flaked mackerel and the Grace Mayonnaise and set aside.  Roll out the dough on a lightly floured board and divide into 8 pieces.  Spoon 1/4 cup of mackerel mixture on each circle.  Brush the edge of the dough with water and seal using a fork.
  5. Heat remaining Grace Vegetable Oil and use to deep fat fry patties for about 5 minutes or until lightly browned.  Drain on absorbent paper.

    To Serve:  Serve with tomato slices and shredded lettuce leaves.
