Grace Earth Chef Veggie Curried Mutton with String Beans

Ingredients

  • Packet grace earth chef veggie curried mutton
  • Cups boiling water
  • Cloves garlic, minced
  • Stalks escallion, chopped finely
  • Sprigs thyme, chopped finely
  • Whole pimento berries, crushed
  • Tablespoon Grace Vegetable Oil
  • Teaspoon ginger, grated
  • Ounces onion, chopped
  • Medium sweet pepper, chopped
  • Whole green scotch bonnet pepper, de-seeded and chopped
  • Ounces string beans, cut on the diagonal
  • Teaspoon salt

Method

1. Place Grace Earth Chef Veggie Curried Mutton in a 2 litres (2 quarts) bowl; pour on 500 ml (2 cups) boiling water and leave to re-hydrate for 5 minutes.

2. Mix in minced garlic, finely chopped escallion and thyme and crushed pimento berries. Allow to marinate for 10 minutes.

3. Heat Grace Vegetable Oil in a large skillet; add grated ginger and allow to burn. Sprinkle on the contents of the seasoning sachet, mix well and saute for 1 minute.

4. Pour in marinated Grace Earth Chef Veggie Curried Mutton to pot and stir well. Allow to brown for 2 minutes.

5. Add chopped onions, chopped sweet pepper and the chopped green scotch bonnet pepper and gently stir.

6. Mix in string beans and cover pot. Reduce flame and allow to simmer for an additional 3 minutes.

7. Adjust flavour with salt.

To serve

Serve hot with your choice of Grace Brown Rice or Grace Pasta.
