Ingredients
- 1 Packet grace earth chef veggie curried mutton
- 2 Cups boiling water
- 1 Tablespoon Grace Vegetable Oil
- 4 Cloves garlic, minced
- 1 Teaspoon ginger, grated
- 4 Stalks escallion, chopped
- 2 Sprigs thyme, chopped
- 1 Whole green scotch bonnet pepper, chopped
- 8 Ounces irish potatoes, cubed
- 8 Ounces carrots, cubed
- 8 Ounces onion, diced
- 1 Medium sweet pepper, chopped
- 3 Whole pimento berries, crushed
- 1 Teaspoon salt
Method
1. Place Grace Earth Chef Veggie Curried Mutton in a 2 litres (2 quarts) bowl; pour on 500 ml (2 cups) boiling water and leave to re-hydrate for 5 minutes.
2. Sprinkle on the contents of the seasoning sachet, mix well and leave to marinate for 5 minutes.
3. Heat Grace Vegetable Oil in a large skillet; add minced garlic and grated ginger and allow to burn for 1 minute.
4. Add seasoned Grace Earth Chef Veggie Curried Mutton to pot and stir well.
5. Add chopped escallion, thyme and pepper, stir well. Cover and allow to simmer for 3 minutes.
6. Stir in diced Irish potatoes and allow to cook for 5 minutes.
7. Gently fold in diced carrots, onions and sweet pepper and crushed pimento berries; allow to simmer for an additional 2 minutes.
8. Remove from flame and serve.
To serve
Serve with steaming hot Grace Rice.
