Ingredients
- 1 Pound (450 Grams) saltfish
- 1 Large onion, chopped
- 1 Stalk escallion, chopped
- 1 Large red sweet pepper, chopped
- 1 Large tomato, chopped
- 3 Tablespoons Grace Vegetable Oil
- 1 Tablespoon grace caribbean traditions curry powder
- 1 Tablespoon cornstarch
- 1 Cup water
Method
1. Soak saltfish in water for an hour, then drain. Repeat the process then flake and remove all bones.
2. Chop onion, escallion, red sweet peppers and tomato and set aside.
3. Heat Grace Vegetable Oil in a sauce pan, add Grace Caribbean Traditions Curry Powder and allow to cook for about two minutes. Add seasonings and vegetables and saute for about 1 minute.
4. Add the flaked saltfish and mix well.
5. Combine cornstarch and water, mix well and stir into the codfish mixture.
6. Cook for a further 3 minutes, stirring constantly.
To serve
Serve with boiled green bananas, yellow yam or dumplings.
