Tuna and White Bean Salad

  • 2 tbsp fresh lemon juice
  • 1 tbsp white wine vinegar
  • 1 tbsp olive oil
  • 1 tsp grated lemon peel
  • 1/4 tsp basil, crumbled
  • 1/4 tsp salt
  • 1/4 tsp Grace Caribbean Traditions Black Pepper
  • 2 cup(s) halved cherry tomatoes
  • 1/3 cup(s) sliced red onion
  • 1/3 cup(s) chopped fresh parsley
  • 1 can(s) Grace Butter Beans
  • 1 can(s) Grace Tuna, drained
  • 1/2 cucumber, diced
  • 1/4 cup(s) Parmesan cheese, shredded optional

Tuna and White Bean Salad Directions

  1. ·         To prepare dressing, whisk together first 7 ingredients (lemon juice through pepper) until blended.
  2. Combine tomatoes, onion, parsley, beans and tuna in a bowl. Toss to combine and top with cheese (optional). Serve and enjoy.
