Grace Jamaican Style Fried Jack Mackerel

  • 1 can(s) Grace Jack Mackerel, 14 oz.
  • 3 cup(s) flour
  • 1 tablespoon(s) granulated sugar
  • 2 teaspoon(s) baking powder
  • 1 tablespoon(s) Grace Caribbean Traditions All Purpose Seasoning
  • 2 cup(s) Grace Vegetable Oil
  • 1 stalk(s) escallion, chopped
  • 1 medium onion, chopped
  • 1 medium tomato, chopped
  • 1 medium green sweet pepper, cut in rings
  • 1 medium red sweet pepper, cut in rings
  • 1 medium yellow sweet pepper, cut in rings

Grace Jamaican Style Fried Jack Mackerel Directions

  1. Drain Grace Jack Mackerel and reserve the sauce.
  2. In a bowl combine flour, granulated sugar, baking powder and Grace Caribbean Traditions All Purpose Seasoning.  Use the mixture to coat the mackerel; shake off excess flour.
  3. Heat Grace Vegetable Oil in a skillet and fry coated mackerel until golden brown.  Drain on absorbent paper towel and set aside.

    Jamaican Style Mackerel Sauce
  4. Heat 2 tablespoons of vegetable oil.  Add chopped escallion, onion and tomato. Saute for 2 minutes, then add the reserved sauce from the Grace Jack Mackerel and stir well.

    To Serve: Plate mackerel and serve with Grace Instant Rice - Spinach.  Spoon on sauce and garnish with sweet pepper rings.
